Expand Options for Customization of Fields

We have leaned heavily on the User Defined Fields to track information that isn't native to the system. It's starting to look like a junk drawer as many of the fields don't relate. We'd like the ability to better organize these fields; we could either incorporate them to other modules or add formatting options to the User Defined Fields. Thanks for your help!
